Even my little ones loved this super quick and easy recipe. You can make them pretty with fall inspired cookie cutters or simply cut out circles (or even slice into squares). Easily make them vegan with this vegan pie crust recipe and vegan butter for a delicious and effortless holiday treat!

You only need 4 simple ingredients for this recipe! Here’s what you’ll need to make Pie Crust Cookies:
Leftover Pie Crust Dough – I used my favorite vegan pie crust leftover dough for this recipe, but any type of leftover pie dough works great.
Butter – Regular butter, vegan butter, or even coconut oil are great options to brush over these cookies!
Brown Sugar – I love the warm taste of brown sugar on these pie cookies, but regular granulated sugar or raw sugar work great, too.
Cinnamon – Cinnamon is my go-to for making these pie crust cookies taste like all the fall things!

How to Store Pie Crust Cookies
Once fully cooled, these Pie Crust Cookies can be stored in an airtight container at room temperature for 3-5 days. They can also be kept in the refrigerator for 7-10 days!
If you’re planning on freezing these cookies, I would recommend cutting the shapes, adding the toppings, and layering with parchment paper in an airtight container. Freeze the Pie Crust Dough Cookies raw, then keep them for up to 3 months. When ready to bake, thaw them out the night before and bake according to directions.

Easy Pie Crust Cookies
Ingredients
- 1 cup leftover pie dough (or however much you have)
- 2 Tablespoons butter, melted (or vegan butter)
- 2-4 Tablespoons brown sugar
- 2 teaspoons cinnamon
Instructions
- Preheat oven to 350 degrees F.
- Roll out the leftover pie dough to create a flat disk.
- Use cookie cutters to cut out cookie shapes.
- Brush the melted butter over each cookie.
- Top each cookie with a sprinkle of brown sugar and cinnamon (to taste).
- Bake the pie cookies for about 10-15 minutes, or until the edges begin to lightly brown.
- Let cool, serve, and enjoy!
