Now for my dear friends who have been here before, you know my love for s’mores. I’ve made Healthy S’mores, S’more Tartlets, and I love them so much that now I’ve found a way to put them in pancakes. Figures, right? AS IF eating them for dessert is enough. Leave it to me to add them to breakfast!
These Healthy S’more Pancakes are a variation of my Pecan Pie Pancakes. I adapted the recipe by simply removing the nutmeg from the batter and changing the topping. For the topping, these dark chocolate chips are the BEST and melt perfectly! I also love these vegan mini marshmallows!
The S’more Pancakes Batter
The pancake batter is super easy to make! Everything is blitzed in a blender and then dolloped in a hot pan to make light and fluffy pancakes. The batter is made with vanilla protein powder to give you a little energy kick ready for the day ahead.
They’re perfect for a healthy but splurgy weekend brunch, or make them in advance and eat them throughout the busy week!
The Topping
I love the simple topping of chocolate, maple syrup and marshmallows but you could also add chopped nuts such as cashews, walnuts, pecans, hazelnuts or even nut butters such as almond or peanut butter!
Top Tips For Making Healthy S’more Pancakes
- Remember to grease the skillet or frying pan with a cooking spray before frying the pancakes
- Once the pancakes are cooked you can let them cool and store them in an airtight container for 1-2 days
- Try to use good quality chocolate for this recipe, dark chocolate would work best but you could use your favorite
- Try placing the pancakes under the broiler for a couple minutes to melt the marshmallows!

Healthy S'more Pancakes
Ingredients
Pancakes:
- ½ cup egg whites
- 1 banana
- 1 scoop lean vanilla protein powder
- ¼ cup coconut flour
- ¼ cup plain greek yogurt
- 2 Tbsp cinnamon
- Pinch salt
Topping:
- 2 Tbsp dark chocolate chips
- 1 Tbsp real maple syrup
- 2 Tbsp mini marshmallows
Instructions
- Combine all of the pancake ingredients by hand or in a food blender.
- Spray a skillet or pan with coconut oil and set over medium heat.
- Make pancakes (about 10 small pancakes or 6 medium).
- Melt the dark chocolate chips in a glass container. Add the maple syrup, then pour the mixture over the pancakes and top with marshmallows.
- Serve and enjoy!
