Funny story about these pancakes….they were created completely by accident! I know, right?? Love it when crazy accidents turn into the best protein pancakes you’ve ever had. The best!
We had tons of bananas because SAMS CLUB, lots of eggs that needed to be used up (thanks to our farmer friends at church), and a ginormous bag of Mocha Whey Protein that I had bought forever ago (because…muscle??? who knows. I tend to get crazy at the grocery store…). We were about to go out of town for the weekend, so I combined it all and we successfully had breakfast for dinner! The crazy part is that once I realized that the recipe worked (and after sharing the recipe with you guys on snapchat, of course), I decided to TRIPLE the recipe and freeze the extra pancakes. Because in this household, we waste NOTHING. NOTHING, I say!
As a result, our beloved fire alarm from the Healthy French Toast w/ Peach Chia Seed Compote recipe decided to go crazy again. It just hasn’t been the same since I made that recipe! We had just gotten it to a place where it wouldn’t RANDOMLY go off, and these pancakes set it off all over again. Not because I burned anything, not because of a fire, not because the battery is dying, but because it loves to sing the song of its people to us. At random times, when we least expect it. The evening of these pancakes, it went off randomly 2-3 times, loud and proud.
Never a dull moment in this home! And especially when it comes to our healthy eats 😉
These Mocha Peanut Butter Protein Pancakes are heavenly!
As in, sweet, creamy, melt-in-your-mouth heavenly. If you’re not into whey protein, there are lots of other mocha protein options out there. However, I haven’t tried them in this recipe so you will have to let me know how it turns out! Also, I created the optional peanut butter topping simply by mixing together about a spoonful of peanut butter with a couple of spoonfuls of organic maple syrup. Super easy! And then loaded it up with melted organic dark chocolate. SPLURGE!
But seriously, can I get an amen on these pancakes?
Here’s the delicious recipe:
Mocha Peanut Butter Protein Pancakes
- 3 bananas
- 4 eggs
- 10 scoops mocha protein I used whey
- 1/4 cup peanut butter
Mix all ingredients together.
Create pancakes over medium heat.
Serve and enjoy!
