Funny story about these pancakes….they were created completely by accident! I know, right?? Love it when crazy accidents turn into the best protein peanut butter pancakes you’ve ever had. The best!
We had tons of bananas, lots of eggs that needed to be used up (, and a ginormous bag of Mocha Whey Protein that I had bought forever ago. We were about to go out of town for the weekend, so I combined it all and we successfully had breakfast for dinner!
Adding Peanut Butter to Pancakes
Peanut butter is a great addition to pancakes. Not only does it taste delicious, I mean who doesn’t like peanut butter? but it also adds a little punch of protein and fiber which will give you a nice boost to start the day. Peanut butter can be a healthy addition to pancakes if eaten in moderation!
How to Make Peanut Butter Pancakes
Ingredients
- Bananas – Adds sweetness and is full of potassium and fiber, great for breakfast
- Eggs – Helps keep the pancakes soft, light and fluffy
- Mocha protein powder – For added protein and delicious mocha flavor
- Peanut butter – For a delicious nutty flavor and extra energy boost
To make the peanut butter pancakes simply mix everything together in a bowl and pour spoonfuls onto a hot greased pan. Flip to cook evenly on each side and serve.
Toppings to Try
Also, I created the optional peanut butter topping simply by mixing together about a spoonful of peanut butter with a couple of spoonfuls of organic maple syrup. Super easy! And then loaded it up with melted organic dark chocolate. SPLURGE! Here are more ideas to try:

- Nuts
- chocolate sauce
- melted peanut butter (to melt peanut butter simply heat it gently in a pan)
- Maple syrup
- Whipped coconut cream
- Fresh fruit or berries
Can I Freeze these Pancakes for Later?
Yes, you can freeze these pancakes in sandwich bags and either defrost them in the microwave or in a preheated oven until heated all the way through.
Quick Tip: Try wrapping the pancakes individually in plastic wrap, foil or divide them by inserting parchment paper between them. This stops them freezing together and makes it easier to pick out as many as you need for defrosting.
Top Tips to Remember When Making Peanut Butter Pancakes
- If you can’t find mocha protein powder try chocolate or vanilla
- Make sure to grease the frying pan with butter or coconut oil before frying the pancakes
- Test with a small amount of batter first to make sure the pan is hot enough
- Let the pancakes cool completely before storing for later or freezing
- Top with your favorite toppings
As in, sweet, creamy, melt-in-your-mouth heavenly. If you’re not into whey protein, there are lots of other mocha protein options out there. However, I haven’t tried them in this recipe so you will have to let me know how it turns out!

- 10 scoops mocha protein (I used whey)
- 1/4 cup peanut butter
