Viral Trader Joe’s Dumpling Bake Copycat… with Veggies!
I first saw this dumpling bake recipe on Instagram and I knew I had to try it out! It definitely didn’t let me down. Thanks to the use of frozen potstickers, it’s incredibly easy to make, requiring hardly any effort for a truly delicious meal!
After lots of testing, I made my own healthier version using Greek yogurt to add more protein to the sauce and sneak in some hidden veggies. And everything comes together in a single casserole dish, making this honestly one of the easiest meals ever! It has this creamy coconut curry sauce that’s just SO good, and every bite is a dream come true. I know you’re gonna love this recipe as much as I do!

Ingredients
- Dumplings – Use any kind of frozen potstickers, dumplings, or gyoza. I love the chicken potstickers at Trader Joe’s, but pork or beef potstickers also taste great!
Sauce
- Greek Yogurt – Use unsweetened Greek yogurt for the base of the sauce. I prefer whole milk yogurt for a creamier consistency, but any kind will work. Use dairy-free or vegan options to keep your dumpling bake dairy-free.
- Full-Fat Coconut Milk – This contributes to the creamy consistency. You can use light coconut milk for a lower-fat version, but the texture won’t be as silky.
- Thai Red Curry Paste – I find this in the Asian section of my local grocery store.
- Soy Sauce – Substitute tamari sauce to keep the recipe gluten-free.
- Rice Vinegar
- Maple Syrup – Sweetens the sauce without the need for refined sugar. Agave or honey also works.
- Toasted Sesame Oil
- Garlic – Using pre-minced garlic is one of my favorite kitchen hacks to cut down on prep time!
- Veggies – Baby bella mushrooms and chopped broccoli florets add color, nutrients, and fiber to the dish.

- Green Onions
- Sesame Seeds
- Fresh Cilantro
- Brown Rice – I use leftover Instant Pot brown rice or cooked rice packets to keep things super easy.

How to Make This Easy Dumpling Bake Recipe
One of the reasons this recipe went uber viral is because of how easy it is to make! All you need is a greased casserole dish and a few minutes. Here’s how to make this copycat Viral Trader Joe’s Dumpling Bake Recipe:
- Prepare the sauce – Whisk all the ingredients in a baking dish.
- Combine – Add the veggies to the sauce, tossing to combine. Then, layer the potstickers in a single layer over the sauce and veggies. Be sure to spoon some of the sauce over the top of the potstickers to prevent them from drying out!
- Bake – Cover the dish with foil, and bake. Then, remove the foil, spoon more sauce over the potstickers, and continue to bake until the sauce thickens and is super bubbly.
- Serve – Let the dish cool slightly. Then, portion the dumpling bake into bowls with brown rice, and sprinkle green onions, sesame seeds, and fresh cilantro on top. Enjoy warm!


Tips
- Use frozen dumplings straight from the freezer. There’s no need to thaw them! Adding them frozen helps them hold their shape while soaking up the sauce as they bake.
- Cut the veggies into small pieces for even cooking. Smaller broccoli florets and thinly sliced mushrooms soften quickly in the oven and blend seamlessly into the creamy curry sauce. My picky eaters don’t even notice them!
- Spoon the sauce over the dumplings before baking. This prevents any dry spots and helps the dumplings absorb flavor as they cook.
- Cover the dish tightly for the first bake. Sealing the baking dish with foil traps steam, allowing the dumplings to cook through while the sauce gets hot and bubbly.
- Uncover at the end of cooking. Baking the dish uncovered during the final stretch lets excess moisture evaporate, giving you a rich, spoonable sauce that clings to the ingredients and prevents the dumplings from being soggy.

Variations
- Make it spicy. Stir a teaspoon or two of chili crisp or a drizzle of Sriracha into the sauce for extra heat.
- Swap the dumplings. Use shrimp, pork, or veggie dumplings instead of chicken for a slightly different taste.
- Add peanut flavor. Whisk 2-3 tablespoons of creamy peanut butter into the sauce for a Thai-inspired twist.
- Go extra veggie-heavy. Add snap peas, bell peppers, shredded carrots, or baby spinach to bulk it up. It’s also a great way to use up leftover veggie scraps!
- Change the base. Serve the dumpling bake over jasmine rice, cauliflower rice, or rice noodles instead of brown rice.
How to Store
This dumpling bake recipe is best served right away while it’s still warm. However, you can transfer leftovers to an airtight container and store them in the fridge for up to 3-4 days. I don’t recommend freezing leftovers!
To reheat, warm individual portions in the microwave. Or, cover the dish with foil, and warm it in the oven just until it heats through. Add a splash of water or coconut milk if needed to loosen the sauce back up, and it’ll still be SO good .

Dumplings
- 18-22 frozen chicken potstickers/dumplings/gyoza (I used a 14-ounce bag of chicken dumplings)
Sauce
- 1/2 cup plain Greek yogurt
- 1 1/2 cups canned full-fat coconut milk (stirred well)
- 2 Tablespoons Thai red curry paste
- 2 Tablespoons soy sauce (or tamari sauce)
- 1 Tablespoon rice vinegar
- 1 Tablespoon maple syrup
- 1 Tablespoon toasted sesame oil
- 6 teaspoons minced garlic
Veggies
- 2 cups thinly sliced baby bella mushrooms (8 ounces)
- 2 cups chopped broccoli florets (cut small)
For Serving
- 2 green onions (thinly sliced)
- 1 teaspoon sesame seeds
- 2 Tablespoons fresh cilantro (chopped)
- 2 cups cooked brown rice
Instructions
- Preheat the oven to 400°F. Grease a 9”x13” casserole dish with cooking spray.
- In the baking dish, whisk together the sauce ingredients.
- Add the veggies and toss with the sauce.
- Place frozen potstickers in a single layer on top of the sauce/veggies. Spoon some of the sauce over them so they’re not dry.
- Cover the dish tightly with parchment paper and then foil and bake for 20 minutes.
- Remove the pan from the oven and carefully uncover it. Spoon sauce over any dumplings that aren’t already submerged in the sauce.
- Bake for another 15 minutes (uncovered) until the sauce has thickened a bit and is super bubbly.
- Let cool for 10 minutes before serving.
- Divide among 4 bowls: brown rice, potstickers, the sauce with veggies, green onions, cilantro and sesame seeds.

- Since I have a gas oven, I needed to put my pan on the lower rack, which is closer to the heat source, in order to get the sauce to start bubbling while the pan is covered. So, I’d recommend putting the pan a bit closer to the heat source in your oven, but not directly!

Hey Jenny, you can reduce the amount of thai red curry paste or try a milder curry base like korma or curry powder. It’ll help keep that curry flavor in the dish without the heat. For curry powder I would use 2 teaspoons of curry powder in place of the 2 tablespoons of curry paste. Enjoy!
