Before we dive head first into these glorious overnight oats, I want to update you guys on the house hunt! If you’ve been following along on my personal Insta (or the Healthy Chicken Fajita Tacos and Healthy Sriracha Shredded Chicken Tacos posts), then you know that Cody and I have been on the search for our dream home (and also our first home). I have big news: we found one!!!
It’s a cute little 1920’s bungalow style home that we completely fell in love with at first sight. It’s in a quaint neighborhood and we will be moving in at the end of this month if all goes as planned! Even though we love it and it’s mostly move in ready, we plan on painting everything and remodeling the kitchen (<—- you already know how I feel about that!). I’ll be writing a post about it soon with lots of photos and will be taking all remodeling suggestions at this time! We’ve never done anything like this, so it’ll definitely be a new adventure for us!
For those of you who have remodeled a kitchen while living in your home, I have many questions. The first one being: how on earth do you function with out a kitchen for that long? Do you just eat out everyday? I feel like that will be a tough one for me. But it’ll definitely be worth it! I imagine that this mini kitchen remodel season of life will involve lots of easy, put-together recipes (ahem, TACOS, PIZZA?) and eating out some. Which I’m SUPER ok with! Because let’s be honest, sometimes you don’t feel like cooking anyway. Sometimes you need food to just be ready for you to devour with zero preparation effort whatsoever. So when I initially made these, they were chocolate chip cookie dough FLAVORED overnight oats, which were pretty amazing. But then I remembered that I had recently made these Chocolate Chip Cookie Dough Energy Bites, so I took one and rolled it into smaller pieces of cookie dough. GUYS. Next level status! If you happen to have these on hand, it’s like you’re suddenly eating a dessert for breakfast. So good, definitely recommend!
Chocolate Chip Cookie Dough Overnight Oats
Gluten-Free, Refined Sugar Free
- 1/2 cup rolled oats
- 2 Tbsp cashew butter
- 1/2 cup almond milk
- 1 Tbsp maple syrup
- 1 packet stevia
- 1 Tbsp chocolate chips
Mix the rolled oats and cashew butter together.
Add in the milk, maple syrup, stevia, and chocolate chips.
Place in a mason jar and refrigerate overnight. Enjoy in the morning!
