Meal Prep Breakfast Egg Bagels Recipe
Busy mornings have gotten SO real since school started last week, and these Meal Prep Breakfast Egg Bagels have been a total lifesaver! I’m someone who definitely has to eat breakfast to function, and I love that these bagels are full of protein and healthy ingredients. They’re even great for a quick lunch!
You can use any type of bagel you want, but I especially love these low-carb everything bagels. I mix chopped spinach and bell peppers with my eggs, but the veggie options are endless! Simply bake the eggs in a baking dish, slice them, and add cheddar cheese to the bagels, microgreens or more spinach, and any sauce you want. Wrap them, freeze them, and then heat them up when you’re ready to enjoy!

Ingredients/Substitutions
You only need a few simple ingredients for these breakfast bagel sandwiches!
- Avocado Oil – or melted butter!
- Eggs
- Chopped Spinach
- Chopped Bell Peppers
- Salt/Pepper/Paprika
- Low-Carb Everything Bagels (sliced in half)
- Cheddar Cheese
- Microgreens (optional)
How to Make Easy Breakfast Egg Bagels
- Whisk eggs, spinach, bell peppers, and seasoning together.
- Bake the egg mixture in an 8″x10″ or 9″x9″ baking pan.
- Slice and toast the bagels.
- Cut the baked egg mixture into 4 slices with a spatula and place each one on a bagel.
- Add cheese, greens, sauces, and anything else you want!

Meal Prepping This Recipe
Meal prepping these flavorful breakfast sandwiches is so easy! Once you have put the bagels together, let them cool and wrap them each in parchment paper. Place them in an airtight container or individual freezer bags. When ready to enjoy, heat them up in the microwave or the oven! These breakfast bagels can last for 2-3 months in the freezer.

Meal Prep Breakfast Egg Bagels

Ingredients
- 1 Tablespoon avocado oil
- 6 large eggs
- 1 cup chopped spinach
- 1/4 cup finely chopped bell peppers
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 4 medium low-carb everything bagels (sliced in half)
- 4 slices cheddar cheese
- microgreens (optional)
Instructions
- Preheat the oven to 375 degrees F.
- Drizzle the avocado oil in the bottom of an 8"x10" or 9"x9" baking dish.
- Whisk the eggs, chopped spinach, bell peppers, salt, pepper, and paprika together in a bowl.
- Pour into the baking dish and bake for 20-25 minutes.
- In the meantime, slice the bagels and toast them if desired.
- Slice the egg into 4 squares (a spatula works great for this) and place each one on a bagel.
- Add cheese, greens (optional), and anything else you want!
