Hmmm….I don’t know about this…..I’m not really a salad girl….
Mmmm, this is actually good!
Wow, I feel so healthy right now.
I’ll probably literally glow after I eat this.
I think I’m even going to workout twice today.

Lettuce, meh. But at least it’s chopped up and mixed will all of the other good stuff.

I can basically conquer the day now that I’ve had this salad!
Y’all. My salad struggle is real. I need to be completely honest with you about that because it’s a real problem and I feel like there might, just maybe, be a couple of you who struggle with this too. Growing up on basically sugar and simple carbs, veggies are still something I’m trying to figure out in my adult life.
If you struggle with eating veggies and salads, trust me when I say that this Golden Beet Pecan Detox Salad is a life saver!!!
In fact, I think I’m going to make it again and quadruple the servings so that I can just grab it and go!
I’ve noticed a few factors that majorly help my veggie consumption: chopped lettuce, roasted veggies, and adding something sweet. Not to say that this formula works for everyone, but it works for me and it’s thriving in this detox salad! Crunchy chopped lettuce, melt-in-your-mouth roasted beets, sweet cranberries, and wholesome pecans. SO. GOOD. Wins all around!
Top it off with a little bit of tahini for added creaminess 🙂 Add some protein and make it a full meal!

Golden Beet Pecan Detox Salad
Ingredients
- 2 golden beets
- 1 cup mini carrots
- 2 cups chopped greens
- 1 Tbsp dried cranberries
- 1 Tbsp pecans
- 2 Tbsp tahini
Instructions
- Preheat oven to 425 degrees.
- Peel and chop the beets into small pieces.
- Place on an oiled baking sheet and roast for 15 minutes (or until soft).
- Chop the carrots and greens.
- Combine everything in a salad bowl, serve, and top with tahini. Enjoy!

Hi, Maddy! Yes, the beets were roasted. I used avocado oil because I happened to have it on hand, but coconut or olive would work great, too! Personally, I enjoy mixed mustard greens because they have a peppery taste, but spinach or regular romaine lettuce work great, too!
