It’s been awhile since I’ve made a taco recipe. Remember the Spicy Salmon Tacos w/ Avocado Lime Dressing and Sriracha Lime Shrimp Tacos? Those seem like an eternity ago!
But since every day is pretty much taco day in our household (seriously, these Healthy Sriracha Shredded Chicken Tacos e’ry day!), it seemed about time to add a few more to the repertoire.

Also, it’s typically about this time every year that we go on our annual family tradition trip to Mexico. In an effort to compensate for the fact that we’re not heading to warmer weather, beaches, and sun tans right at this moment, these delicious and healthy breakfast tacos seemed more than appropriate.

- Corn Tortillas
- Eggs
- Avocado
- Tomatoes
- Black Beans
- Cilantro

How to Make Breakfast Tacos in 5 Easy Steps

Heat the tortillas over medium heat in a pan (to desired amount). Set aside.

Cook the eggs over medium heat. Once cooked, place in each tortilla.

Heat up the black beans and place in tortillas.

Slice the avocado and tomatoes. Place in tortillas.

Top with cilantro and enjoy!

How to Make a Breakfast Taco Ahead of Time
Here’s how I like to prep breakfast tacos ahead of time:

Cook everything first – Scramble the eggs, warm the tortillas, and heat up the beans.

Assemble – Layer the eggs, beans, and tomatoes in the tortillas. Skip the avocado and cilantro for now!

Wrap and store – Wrap each taco in foil or parchment paper and store in an airtight container in the fridge.

Reheat – Just pop them in the microwave (unwrap them first!) or heat them up in the oven for a crispier texture.

Add fresh toppings – Slice up the avocado and add cilantro right before serving for that fresh flavor.
