Good morning, friends! Or afternoon? Evening? Whatever time of day it is that you’re reading this post, it’s COFFEE time! Easy Vanilla Coconut Cold Brew Coffee, that is. 😉
Cody and I are pretty coffee obsessed. While I try not to drink not to drink it past 3pm (cuz sleeping probs), Cody drinks it all of the time. Personally, I’m pretty obsessed with pumpkin spice coffee everything in the fall (using the Vegan Pumpkin Spice Coffee Creamer recipe), but I LOVE switching over to cold coffee recipes in the summer!
Sometimes that looks like grabbing an iced coffee at the coffee shop, but in this case, it looks like sweet coconut milk mixed with vanilla and honey poured over delicious Gevalia Cold Brew Concentrate!

I’m curious as to why you heat the brew, then chill it again. I make similar cold brew coffee almost every day in the summer. I just add coconut milk, vanilla and stevia and pour over ice. Easy and delicious!
Christine McMichael replied:
Hi, Jane! Heating up the coconut milk mixture helps keep the honey and stevia from forming clumps. That’s so awesome! Love it! 🙂

I. Ought two bottles of the Gevalia Cold Press Coffee Concentrate at Shop-Rite and I’m SOLD!! It’s really delicious with absolutely no bitterness. I’m definitely going to try this. Do you use canned coconut milk or the kind from the dairy aisle? Just wondering. Thanks again. I always look forward to your recipes.

That’s so awesome, Faith! Glad to hear that. I typically use the kind from the dairy aisle, but canned should work great, too! 🙂
