I’ve made this Vegan Chocolate Chia Seed Pudding as a snack, breakfast, and dessert. With extra cacao nibs, of course!
For breakfast, I love adding a banana and a little bit of homemade granola to it. Because granola bowl life is the best life, ya know?
I have something to confess. I’ve made chia seed pudding before, and I wasn’t a fan at all. To….liquid-y. To me, it was a drink, not pudding. Maybe I made it wrong? Either way, I just decided I hated it. Then the other day, my cousin texted me and said “I need a good chia seed pudding recipe!”. And I was like DONE. Challenge accepted!

So I was determined to not make another liquid-y chia seed pudding recipe ever again. This one here is a millllllion times better! It tastes like chocolate mousse! But also a little bit like a cookie. So much chocolatey goodness, here! I even thought about freezing it to see how it would taste as chocolate ice cream. If you try this, you’ll have to let me know how it goes!

This Vegan Chocolate Chia Seed Pudding is a great way to load up on the benefits of chia seeds!
How long can you keep chia seed pudding in the fridge?
Chia seed pudding lasts about 5 days in the fridge. It tends to thicken with time, so be sure to mix in a little bit of almond milk before serving!
Vegan Chocolate Chia Seed Pudding
Ingredients
- 1/3 Cup Chia Seeds
- 1 Cup Unsweetened Almond Milk
- 2 Tbsp Almond Butter
- 2 Dates
- 1 Tbsp Cocoa Powder
- 1 Packet Stevia
- 1/2 tsp Cinnamon
- Pinch of Salt
- 1 Tbsp Cacao Nibs (optional)
Instructions
- Remove seeds from dates.
- Place all of the ingredients in a blender and blend to desired consistency.
- Refrigerate if desired and top with cacao nibs or chocolate chips. Enjoy!

I made this for breakfast today and was actually pleasantly surprised! Despite the unappealing gloopy mess, taste-wise it was right on point. I used liquid chocolate stevia instead of the powdered stevia, topped it off with some chocolate almond milk and swirled in some homemade strawberry chia seed jam (chia OVERLOAD). Tasted like dessert for breakfast!
