What you’ll need
Here’s what you’ll need to make these healthy chia seed balls!
Cashew Butter – Cashew butter is one of my favorite go-to nut butters for energy balls, but you can also use almond or peanut butter.
Rolled Oats– Also known as Old Fashioned Oats, these are great for baked goods and energy bites.
Chia Seeds– These tiny guys are loaded with fiber, protein, and give the energy bites their crunch!
Agave Syrup-This syrup is low in the glycemic index and great for keeping the recipe vegan. You can also substitute honey in this recipe!
Matcha Powder– A green tea powder made by finely ground dried tea leaves. It’s sooooo good and one of my favorites!
Vanilla Protein Powder– You can sub any flavor of protein powder you want.
Shredded Coconut– I love coconut in this recipe because it provides the perfect hint of sweetness and texture! If you’re not a fan of coconut, you can also try crushed nuts or even mini chocolate chips.
How to make Matcha Chia Seed Energy Bites
Here’s how to make these matcha protein bites in a jiffy:
1. In a bowl mix the rolled oats, chia seeds, cashew butter, agave syrup, matcha powder, and vanilla protein powder until smooth.
2. Scoop out and roll each energy ball by hand, approx. an inch in diameter.
3. Roll each ball in the shredded coconut flakes.
4. Refrigerate for 10-15 minutes & enjoy!
Tips for making the best Matcha Energy Bites
When making these chia seed energy bites, there are few simple tips for success:
Use plant-based vanilla protein powder
A plant-based protein powder keeps your energy bites light and makes them gluten, dairy, and vegan friendly. Some of my favorite powders include the Arbonne Protein Powder and Tone It Up’s Organic Protein Powder. I love using protein powder in my recipes, which is why making them plant-based and vegan is ideal!
Use a quality matcha
There are many matcha powders out there to choose from, and this can be quite confusing. There are two kinds of matcha to buy, the ceremonial and the culinary. Ceremonial is best for drinking matcha and culinary works well with baking. I personally love this matcha for drinking but have found that Vital Proteins Matcha Collagen works great with baking and making chia seed bites like these. A regular culinary matcha will work just as well, but I do like having that extra boost of collagen in my energy bites!
Refrigerate then roll
Sometimes rolling the dough into a ball can be a sticky mess, especially if it’s warm. To combat this and make your matcha protein balls as round and mess-free as possible, try placing the energy bite dough in the refrigerator before rolling for 10 minutes or so. Cooling it down will allow you to scoop out the dough easier and roll in the coconut flakes easier as well. Also, using a mini ice cream scoop works great for even-sized chia seed bites!
Storing these Matcha Chia Seed Energy Bites
Another great thing about these matcha seed bites is that you can store them in the refrigerator for up to 2 weeks! Keep them in an airtight container and you can freeze them for up to 3 months. Not only are they so easy to make, but the convenience of having a batch ready to go and in your fridge for when that afternoon slump hits is perfect!
Making any kind of energy bite is my favorite and quickest way to make a little snack for my family that will keep us all energized, my sweet tooth satisfied, and my mama heart happy!

These matcha chia seed energy bites look scrumptious. I love cashew butter, dates and chia seeds. I just wonder if the matcha has caffeine? I’ll have to look it up. I’m a mess if I have it. But I bet I could substitute it with say, cocoa powder :).
Christine McMichael replied:
Thank you, Elaine! 🙂 Me too, all of the best things in life! Yes, matcha does have a little bit of caffeine. I think cocoa powder would be a delicious substitute!
