It’s been awhile since I’ve made a taco recipe. Remember the Spicy Salmon Tacos w/ Avocado Lime Dressing and Sriracha Lime Shrimp Tacos? Those seem like an eternity ago!

But since every day is pretty much taco day in our household (seriously, these Healthy Sriracha Shredded Chicken Tacos e’ry day!), it seemed about time to add a few more to the repertoire.

Also, it’s typically about this time every year that we go on our annual family tradition trip to Mexico. In an effort to compensate for the fact that we’re not heading to warmer weather, beaches, and sun tans right at this moment, these delicious and healthy breakfast tacos seemed more than appropriate.

If you’re on a beach somewhere, enjoying sun rays while I continue to lack in Vitamin D here in cloudy, chilly (<—–well, to my standards) Oklahoma, be sure to tag #JarOfLemons so that I can vicariously live through your wonderful life.

I’m just a little bit ready for some sunny spring/summer weather over here. Can you tell?

In the meantime, I’ll find contentment while sipping on Golden Glow Pineapple Turmeric Smoothies and devouring these healthy breakfast tacos!

Here’s What You Need to Make Healthy Breakfast Tacos:

  1. Corn Tortillas
  2. Eggs
  3. Avocado
  4. Tomatoes
  5. Black Beans
  6. Cilantro

All you need is 15 minutes, a pan, and the ingredients listed above. You’ll have The BEST Healthy Breakfast Tacos in no time!

How to Make Breakfast Tacos in 5 Easy Steps

  1. Heat the tortillas over medium heat in a pan (to desired amount). Set aside.

  2. Cook the eggs over medium heat. Once cooked, place in each tortilla.

  3. Heat up the black beans and place in tortillas.

  4. Slice the avocado and tomatoes. Place in tortillas.

  5. Top with cilantro and enjoy!

Helpful Tips and Variations

  • If you’re feeling like breakfast for dinner simple double this recipe
  • You can also warm up the tortillas in the oven until they become soft and easy to fold
  • Top with hot sauce for a spicy kick
  • Try serving with homemade salsa
  • Kidney beans can be used instead of black beans or even try refried beans
  • Switch it up with different veggies such as leftover roast peppers, zucchini or eggplant
  • You can also add leftover meat such as roast chicken

    OMG Christine, I’m so hungry looking at the pictures!!! It’s such a simple fun recipe and would be perfect for a quick breakfast + I love Mexican food so much that I can eat this almost everyday 😉

    My oldest loves tacos and if I could include these healthy ingredients in them it will be a bonus. There is nothing in this that he does not like and I am definitely trying this out for him.
