The Starbucks fall menu release almost feels like it’s a holiday sometimes! I love a new drink comes out and when we can taste all the warm flavors of autumn at the turn of the season. It’s something I look forward to every year and I was so excited when they announced this new, fun latte!
After tasting the Iced Pecan Crunch Oatmilk Latte I knew I needed to make it at home. The pecan flavor comes through and it’s SO creamy. The pecans add flavor to the maple syrup base and then get used as the crunchy sprinkle over the top (my favorite). You’ll love how easy and over-the-top tasty iced latte is!

Pecan Crunch Oatmilk Latte ingredients
This easy latte recipe has only 5 individual ingredients. Here’s what you’ll need to make it:
Pecan Crunch Syrup
- Pecans – Use plain, raw pecans for this recipe. You will toast them just a bit before making the syrup for an even deeper nutty flavor. The pecans also get used for the pecan crunch topping.
- Maple Syrup – Maple syrup is the perfect base for the pecan syrup recipe. It’s sweet and the maple flavor compliments the pecans without overpowering them.
Iced Pecan Latte
- Espresso – I make espresso in my Nespresso machine (that I’m COMPLETELY obsessed with). You can also use instant espresso powder to make it quickly at home, too!
- Oat Milk – This barista blend oat milk is thick, creamy, and the ideal texture for making dairy-free lattes at home! You can also substitute with other milks like 2%, soy milk, or even pecan milk if you really want that pecan flavor to come through.
- Pecan Syrup – I highly recommend making your own syrup because it’s so easy, but if you’d rather buy it there are a few high quality store-bought pecan syrup options out there.

How to Make an Oatmilk Latte
Homemade pecan syrup in 5 minutes? You’ll want to make it over and over, and you can because it is SO EASY! Here’s how to make this Iced Pecan Crunch Oat Milk Latte:
- Toast the pecan pieces in a small saucepan until fragrant.
- Add the maple syrup and cook on a low boil for 4-5 minutes.
- Strain the pecans, reserving the syrup.
- Allow the pecans to cool and dry to put on top of the drink.
- Add the espresso, creamy oat milk, and syrup to a tall glass of ice and stir.
- Using a frother, froth the cold foam mixture until thick and foamy.
- Pour the nondairy vanilla sweet cream cold foam on top of the latte and sprinkle on cinnamon and the maple pecan pieces.

How to Store the Pecan Syrup
The homemade pecan syrup makes about 1/4 cup, or enough for 2 lattes. So if you’re only make 1 drink, you can store the leftover syrup in a glass mason jar or small syrup container and keep it at room temperature for up to 5-7 days! You can also store it in the refrigerator for up to 2 weeks.
TIP: Feel free to double or even triple the syrup ingredients to make a big batch and have Iced Oatmilk Pecan Lattes all week long!

Not at all! If you prefer to use regular milk, I suggest using 2% in the latte, and heavy cream to make the cold foam so it’s nice and thick.

Pecan Syrup (makes 2 servings)
- 1/4 cup finely chopped pecans
- 1/2 cup maple syrup
Latte
- 3 ounces espresso (or 2 shots)
- 1/2 cup barista-style oat milk
- 2 Tablespoons pecan syrup
Vanilla Cold Foam
- 1/4 cup barista-style oat milk
- 1 Tablespoon maple syrup
- 1/2 teaspoon vanilla
Instructions
- Add the pecans to a small saucepan and turn the heat the medium-low.
- Toast the pecan pieces for just a minute, stirring constantly, until fragrant.
- Add the maple syrup and cook on a low boil for 4-5 minutes.
- Strain the pecans through a fine mesh strainer and allow them to cool and dry to top the drink. Set the syrup aside.
- Add the espresso, oat milk, and 2 Tablespoons syrup to a large glass of ice.
- Using a frother, make the vanilla cold foam by frothing the oat milk, syrup, and vanilla until thick and foamy.
- Pour the cold foam on top of the latte and sprinkle on cinnamon and the maple pecan pieces. Enjoy!
