I’ve actually been craving wraps for lunch for like a month now. I keep buying multi-grain wraps because “I’m making wraps this week”, but I hate deli meat! So it just never happened. Sad story.
The happy story is that they happened today and they BROUGHT it! The chicken is perfectly spicy, yet balanced out by the fresh and creamy avocado and the delicious Hidden Valley® Greek Yogurt Ranch. This ranch dressing is EPIC because it tastes just like the original dressing, but with half the calories! It gives the wraps just the right amount of creamy goodness and takes them to ANOTHA’. LEVEL.
Let’s just talk about these dressings for a second. When it comes to salad dressings, you have to find something that you love! Don’t get me wrong, before my healthy eating days, I was all about that sugary, fat loaded, calorie dense dressing. Oh, yes! But now, it’s honestly a little tough to find something delicious that’s actually healthy and low calorie. I might be the pickiest person you’ve ever met when it comes to salad dressings. But these Hidden Vallye® dressings taste so much like the originals, it’s blowing my mind! They’re perfect for a quick lunch-time salad or wrap, and have way less calories!
These Slow Cooker Fiesta Ranch Chicken Wraps have springtime written all over them! I’ve been feeling the urge to spring clean my food life, and since food is a huge compartment of my life, I think it’s pretty important to change out those fall/winter recipes for new and fresh spring/summer recipes in order to prevent healthy eating burn out! (<—– That’s totally a thing. More on that later. But trust me!) So anyway, that spring cleaning feeling took over and here we are at these delicious springtime wraps!
Warning: You will want to fill your wrap up to the point of no closure. As in literally, it won’t close. Be wise with your space, friend! 😉 Or don’t, and just let it be a ginormous disaster of the most delicious stuff ever. YESSSS.

Slow Cooker Fiesta Ranch Chicken Wraps
- 7 chicken tenders
- 1 Tbsp olive oil
- 1 tsp crushed red pepper
- 1 tsp chipotle chili powder
- 4 flat wraps
- 4 Tbsp Hidden Valley® Greek Yogurt Ranch Dressing
- 6 mini sweet peppers
- 2 tomatoes
- 1/2 cup corn
- 1/2 cup black beans
- 2 cups spinach
- 1 avocado
- Place the chicken tenders, olive oil, crushed red pepper, and chipotle chili powder in the slow cooker. Cook on low for 4 hours.
- When the chicken is done (check to ensure that it is fully cooked), lay out the flat wraps and drizzle 1 Tbsp of Hidden Valley® Greek Yogurt Ranch Dressing over each one.
- Cut the mini sweet peppers and tomatoes into cubes. Top the wraps evenly.
- Add the corn, beans, and spinach.
- Cube the avocado and add to the wraps (or serve on the side).
- Add the chicken, close the wrap, and DEVOUR!
