I’ve made everything from Biscoff Lattes to Biscoff Ice Cream. There’s just something about the sweet, warm flavors that fits in perfectly with the season!
So, when I knew I had a hectic week ahead of me and leftover Biscoff spread in the pantry, making Biscoff overnight oats was the obvious next step. And I think this might be one of my favorite versions yet! Blending the oats makes them SO thick and creamy, and the cookie butter topping takes them completely over the top. They taste similar to my Biscoff Cottage Cheese Cheesecake, and honestly, who doesn’t want dessert for breakfast? I go to bed looking forward to mornings when I have these prepped in the fridge, and it’s great knowing that these oats are healthy and high-protein, too!

You’ll need a blender (opens in a new tab), overnight oats jars (opens in a new tab) (or airtight containers), and a microwave-safe bowl. Here’s how to make Biscoff Overnight Oats:
- Blend the base – Combine the oats, cinnamon, salt, cookie butter, maple syrup, yogurt, and milk in a blender, blending until smooth. The mixture will be thick! Feel free to add more milk for a thinner consistency.
- Chill – Transfer the blended oat mixture to jars, cover, and store them in the fridge so the oats absorb the liquid and soften.
- Add the topping – Melt the cookie butter and coconut oil in the microwave. Pour the mixture over the oats and chill in the fridge to allow the topping to set. Top with crumbled Biscoff cookies just before serving, and enjoy!

Instructions
