Ingredients in an Iced Gingerbread Oatmilk Chai Latte
Gingerbread Syrup
- Maple Syrup – The maple syrup is the base of the syrup. It has a deep flavor that pairs well with the warm spices and gives a little of the molasses flavor that is typically in gingerbread. You can also make a simple syrup by dissolving 1/2 cup sugar into 1/2 water over medium heat before adding the spices.
- Ground Cinnamon, Ground Ginger, Allspice, Ground Nutmeg, and Ground Cloves – The combination of these spices in the right ratio is what that quintessential gingerbread flavor is ALL ABOUT! It truly makes this syrup next level so your gingerbread latte will be, too. I’ll be making this syrup all winter long.
Latte
- Chai Concentrate – Chai concentrate is a store-bought carton of ready-to-drink chai tea. You can purchase it sweetened or unsweetened, whichever you prefer. I have found that when making a tea latte and adding milk to chai, you really need the concentrate which has a much stronger flavor of all those chai spices than a brewed tea bag.
- Oatmilk – The barista blend or barista style of oat milk is the best type to use for drinks like these. It’s thicker and creamier than regular oat milk so the drink is much more like something you would get at a coffee shop.
Gingerbread Cold Foam
- Oatmilk – You will want to use barista style, or barista blend oat milk for the cold foam. The thick consistency froths into a foam much better than thinner oat milk and you’ll love the taste.
- Gingerbread Syrup
- Pumpkin Pie Spice (Optional) – Starbucks sprinkles the top of the drink with a dash of pumpkin pie spice. Feel free to leave it off if you prefer!

FAQs
Yes, chai tea concentrate is made with black tea. It has about half the amount of milligrams of caffeine as the same amount of coffee does.
Oat milk is creamy, mild in flavor, and brands have started making specialized barista blend styles that work so well in drinks like this. You can always use a different plant-based milk option but look for one that is thick and creamy like soy milk or coconut milk.
Of course! Simply swap the oat milk with equal parts dairy. Higher-fat milk, like whole or heavy cream, would work best for making the cold foam.
Yes! I’ll be adding it to my coffee all winter long. Try it in my Everyday Vanilla Latte Recipe, stirred into hot cocoa, or drizzled over your overnight oats, too!
How to Store Gingerbread Syrup
The Gingerbread Syrup recipe makes about 1/2 cup of syrup or enough for about 4 drinks. Store it in the fridge in a mason jar or airtight container for up to 2 weeks. You could even double the recipe and make Gingerbread drinks for the next couple of weeks in just a few minutes.
