Ingredients/Substitutions
The ingredients for this recipe are simple and easy to find. There are also several ways to make substitutions and make these cookies your own! Here are a few notes about some of the main ingredients in these Eggnog Cookies:
Flour – I used all-purpose flour, but a combination of whole wheat flour and all-purpose is a great option as well!
Butter – Lightly melted butter adds so much flavor to this recipe. If you’re looking to substitute butter, feel free to use coconut oil or vegan butter instead!
Eggnog – Light eggnog helps to cut down on the amount of sugar while keeping the delicious eggnog flavors we all know and love. However, regular eggnog works great, too!
Truvia® Sweet Complete® Granulated All-Purpose Sweetener – If you’re looking to cut the amount of sugar in holiday baking recipes, then Truvia® Sweet Complete® Granulated All-Purpose Sweetener is for you! I love that it measures cup-for-cup like sugar and has zero calories per serving. I buy it at Walmart and love having it on hand for when I’m looking to lower the amount of sugar in recipes!
Truvia® Sweet Complete® Brown Sweetener – While regular brown sugar is an option, Truvia® Sweet Complete® Brown Sweetener contains plant-based stevia sweetness with zero calories per serving that’s perfect in these Eggnog Cookies!
Cinnamon/Nutmeg – I added extra cinnamon and nutmeg to really bring out the flavors in these cookies.
Vanilla/Rum Extract – In addition to vanilla extract, I added a decent amount of rum extract because I think it REALLY brings out the eggnog flavor! It’s so good. However, you can always cut down the rum extract to 1/2 teaspoon if desired.

The Icing Topping
The icing topping in this recipe is just eggnog, water, and powdered sugar. So easy to whisk together! However, there are many ways to top off these cookies or add in other fun ingredients. Here are some ideas:
