Strawberry Popsicles Recipe
If you asked me what my favorite summer treat recipe is, these Strawberry Popsicles are at the top of my list! Along with my Ninja Creami Protein Milkshake, Healthy Mint Chocolate Chip Ice Cream, and Healthy Buster Bars, of course. I love how refreshing these fruity popsicles are, but they have chia seeds that provide healthy fats, protein, and fiber. They’re also naturally sweetened and every bite is full of so much sweet flavor!

All you’ll need is a high-speed blender and a popsicle mold to get started!

Ingredients for Chia Seed Popsicles
- Chia Seeds – These add healthy fats, protein, and fiber that take the nutrition level up a notch. And you can’t even taste them!
- Lemon Juice – Fresh is best for this recipe.
- Ripe Strawberries – Washed and tops cut off.
- Plant-Based Milk – Soy or oat milk are my favorites since they’re thick and won’t result in icy pops, but you could really use any type of plant-based milk you want.
- Maple Syrup – Honey works great, too!

How to Make Strawberry Popsicles
It’s so easy to make these healthy popsicles in just 10 minutes hands-on time! Here’s how to make Strawberry Popsicles:
- Mix the chia seeds and lemon juice, then set it aside while you prep the other ingredients (this allows the chia seeds to soak up the liquid, making them softer and easier to blend).
- Place everything into the blender and blend until evenly smooth!
- Pour into a popsicle mold and freeze for 8-12 hours.
- Remove the popsicles from the mold and enjoy or store for later!

Variations
Strawberry Shortcake Popsicles
Add vanilla coconut yogurt or Greek yogurt to the strawberry popsicle base and blend. Prep an oat crumble mixture with dairy-free butter (melted), rolled oats, almond flour, and maple syrup. Mix in crumbled freeze-dried strawberries, then add to the bottom of the popsicle molds. Pour in the blended mixture and freeze!
Strawberry Yogurt Popsicles
After blending the ingredients, layer a little bit of coconut yogurt or vanilla Greek yogurt into the popsicle mixture in the popsicle mold. It makes them beautiful and so delish!
Strawberry Crunch Popsicles
Add crushed golden Oreos mixed with crumbled freeze-dried strawberries to the bottom of the popsicle molds before pouring in the liquid and freezing.
Strawberry Lemonade Popsicles
While the chia seeds are already soaked in lemon juice, giving these popsicles a hint of lemon, you can also make Strawberry Lemonade Popsicles by replacing the lemon juice with lemonade and adding a bit extra to the mixture!
How to Store
Store Strawberry Chia Seed Popsicles in an airtight container with a lid in the freezer for up to 3 months! Be sure to add a layer of parchment paper between each popsicle so that they don’t stick together.

Strawberry Popsicles Recipe
Equipment
Ingredients
- 1/4 cup chia seeds
- 1/4 cup lemon juice
- 3 cups ripe strawberries (washed and tops cut off)
- 1 1/2 cups plant-based milk
- 2-3 Tablespoons maple syrup
Instructions
- Mix the chia seeds and lemon juice together and stir. Set aside while you prep the other ingredients.
- Pour the chia seed mixture, the prepped strawberries, milk, and maple syrup into the blender.
- Blend until evenly smooth.
- Pour into a popsicle mold and add the lid and popsicle sticks.
- Freeze for at least 12 hours.
- Remove the popsicles from the mold and enjoy, storing any extra popsicles in an airtight container with parchment paper between each popsicle. Enjoy!
