Protein Powder – I love using this plant-based vanilla protein powder in this recipe, but pretty much any type of protein powder will work. Plant-based chocolate protein powder is a great choice, too!
Whole Wheat or Oat Flour – A little bit of whole wheat or oat flour work great in this recipe. You can always use all-purpose flour, too!
Baking Soda/Salt/Vanilla – Essentials for making the best protein cookies!
Coconut Oil – Don’t have coconut oil on hand? Butter or vegetable oil is an option as well.
Eggs – Easily make this recipe vegan by using a flax egg if necessary.

Peanut Butter Chocolate Protein Cookies
Ingredients
- 1/2 cup vanilla protein powder (or chocolate)
- 1/4 cup whole wheat flour (or oat flour)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 Tbsp coconut oil (lightly melted)
- 2 large eggs
- 1/2 tsp vanilla
- 1/4 cup maple syrup
- 1/2 cup peanut butter
- 1/4 cup chocolate chips
Instructions
- Preheat the oven to 350 degrees F.
- Mix the protein powder, flour, baking soda, and salt together in a large bowl.
- In a separate bowl, mix the coconut oil, eggs, vanilla, maple syrup, and peanut butter together.
- Pour the liquid ingredients into the dry ingredients and mix.
- Add in the chocolate chips and mix until even.
- Use a spoon to form cookies on an oiled baking sheet (or lined with parchment paper).
- Flatten each cookie.
- Bake for about 10-12 minutes.
- Serve and enjoy!
