If you’ve never had truffle french fries, prepare to fall in love! An elevated version of regular fries, they’re one of my favorite foods of all time. Truffle fries are french fries that are cooked with truffle oil and parmesan cheese.
While truffle oil can be on the slightly pricier side, there are still many reasonable options at most grocery stores, and a little goes a long way. It’s totally worth the splurge, in my opinion, adding a deep, slightly woody, nutty flavor to your French fries! Paired with savory, salty parmesan, the flavor is incredibly delicious.

I’ve had some delicious truffle fries at various restaurants. However, after much testing and perfecting this recipe, I can honestly say that nothing beats parmesan truffle french fries that are made at home. Baked instead of fried, my version is much healthier than most options, and it’s ready to eat in about an hour!
Pair it with a side of garlic aioli (included in the recipe below), cilantro lime sauce, or homemade BBQ sauce for dipping. My kids go crazy for this recipe! Parmesan truffle fries might sound fancy, but they come together with pretty simple ingredients. Here’s what you’ll need for this recipe:
Truffle Fries
- Potatoes – I use Russet or Idaho potatoes for fries because they have a higher starch content than other varieties, which helps create the crispy exterior we want.
- Avocado Oil – Avocado oil is great for this recipe because it has a neutral taste. But any type of cooking oil will work!
- Sea Salt and Black Pepper – Add more or less to taste.
- Garlic – For the best flavor, use whole, fresh, minced garlic cloves. If you’re out, garlic powder or store-bought minced garlic will also work.
- Truffle Oil – The star of the show! Find truffle oil in the oil section of your local grocery store.
Garlic Aioli
- Avocado Oil Mayo – This forms the base of the sauce, creating a creamy consistency and tangy flavor. You can also use full-fat, plain Greek yogurt if preferred.
- Garlic – Again, use freshly minced garlic for the best taste!
- Sea Salt – A little goes a long way to enhance the flavor of the sauce.
- Truffle Oil – This infuses the aioli with a rich, earthy flavor, tying it in with the taste of the fries and making it infinitely better than any aioli you’ll find at the store!

How to Make Truffle Fries with Garlic Aioli
You only need a few minutes of prep time to make this recipe. Then, the oven does all the heavy lifting! Here’s a quick overview of how to make homemade garlic truffle fries with aioli:
- Soak the Potatoes – Cut the potatoes into thick sticks, and submerge them in a bowl of ice water. Soak for at least 10 minutes. Then, strain the liquid, and pat the potatoes dry.
- Season – Divide the potatoes between two parchment paper-lined pans, and toss them with oil, salt, and pepper.
- Bake – Spread the potatoes in an even layer, and bake. Then, add the minced garlic, toss to combine, and continue to bake until the fries are crispy and golden.
- Combine – Transfer all the fries to one pan, and toss together. Then, drizzle truffle oil on top, and toss to coat.
- Make the Garlic Aioli – Mix all the ingredients in a bowl until well combined.
- Serve – Top your fries with grated parmesan and a sprinkle of chives, and enjoy warm with the dipping sauce!

Truffle Fry Recipe Tips
- Cut Evenly – Slice the potatoes into 1/2-inch sticks. To do so, I like to cut each potato into 4 to 5 planks. Then, I cut each plank into 4 to 5 sticks. Repeat with all the potatoes. This helps ensure they all cook evenly!
- Don’t Skip the Soaking! – Make sure to soak the potatoes for at least 30 minutes before baking. This removes excess starch and allows them to crisp up beautifully.
- Avoid Overcrowding the Pans – I found that dividing the fries between two pans and spreading them out evenly, is the best way to achieve optimal crispiness. That way they taste closer to real fries rather than just oven-baked potato sticks.
- Save the Garlic Bits – When ready to serve, if you are transferring the fries to a different platter, be sure to scrape off any leftover garlic bits from the parchment paper so they don’t go to waste. Trust me! They add so much flavor to the fries.






Variations of Truffle French Fries
I love a basic truffle fries recipe, but feel free to mix and match different ingredients for a unique flavor! Some of my favorite variations and additions include:
- Spice – Add 1/2 teaspoon red pepper flakes or 1/4 teaspoon cayenne pepper to the fries after tossing with truffle oil for a spicy kick. Want it extra hot? Drizzle 1 teaspoon spicy truffle hot sauce over the top!
- Truffle Rosemary Fries – Toss the fries with 1 teaspoon of fresh chopped rosemary along with the truffle oil for an earthy, aromatic flavor boost.
- Lemon – Mix 1 teaspoon lemon zest with the Parmesan before sprinkling over the fries. For extra brightness, add a squeeze of 1 tablespoon of fresh lemon juice just before serving.
- Black Truffle Butter – Instead of truffle oil, melt 1 tablespoon of black truffle butter and drizzle it over the hot fries for a richer, more indulgent taste.
- Truffle Poutine – Top the fries with 1/2 cup cheese curds. Then, pour over 1/2 cup hot beef or mushroom gravy for a luxurious take on poutine.

Honestly, I’ve yet to find something this recipe doesn’t pair well with! However, some of my favorite options include Fiesta Ranch Chicken Wraps, Kale Beef Burgers, Veggie Burgers, and Baja Shrimp Tacos.
How to Store and Reheat Homemade Truffle Fries
Refrigerator: Once cool, transfer the fries to an airtight container, and store them in the fridge for up to 3 days. Keep the aioli sauce in a separate container for up to one week!
Reheat: To serve, warm the truffle fries on a parchment paper-lined baking sheet in the oven at 350 degrees F. for 3-6 minutes or until they’re hot and crispy. Just keep a close eye on them, and be careful not to let them burn!

Truffle Fries
- 3 pounds russet or Idaho potatoes (about 7-8 medium potatoes)
- 3 Tablespoons avocado oil
- 1 teaspoon fine sea salt
- 1/4 teaspoon freshly cracked black pepper
- 10 garlic cloves (finely minced)
- 1 1/2 Tablespoons truffle oil
Garlic Aioli
- 1/2 cup avocado oil mayo (or full-fat Greek yogurt)
- 2 garlic cloves (minced)
- 1/4-/12 teaspoon fine sea salt
- 1/2 teaspoon truffle oil
For Serving
- grated parmesan (optional, to taste)
- 2 Tablespoons thinly sliced chives
Instructions
- Preheat the oven to 425 degrees F and line two rimmed baking sheets with parchment paper. Set aside for later.
- Cut potatoes into 1/2” thick sticks. Place potato sticks into a bowl of ice water as you slice them and let sit for 10 minutes.
- Strain the water from the potato sticks and pat dry with paper towels or a clean kitchen towel.
- Divide the potato sticks among the two parchment-lined pans. Toss each pan of potatoes with 1 1/2 Tablespoons avocado oil, 1/2 teaspoon sea salt, and 1/8 teaspoon pepper.
- Spread into an even layer and bake both pans for 30 minutes.
- Add the minced garlic onto the pans of partially cooked fries. Mix together until combined & spread the potato sticks evenly on the pan. Bake for an additional 10 minutes.
- Transfer all fries to one pan and toss together. Drizzle truffle oil over the fries and toss together.
- Mix together the Garlic Aioli ingredients in a bowl until well combined.
- Serve the fries with grated parmesan, sprinkle of chives and a side of dipping sauce.
Notes
- To cut potatoes into 1/2” sticks, you can cut each potato into 4 to 5 planks. Then, cut each plank into 4-5 sticks. Repeat with all potatoes.
- I found that dividing the fries onto two pans is best for optimal crispiness so they taste closer to real fries than an oven-baked potato stick.
- When ready to serve, if you are transferring the fries to a different platter, be sure to scrape off any leftover garlic bits from the parchment paper so they don’t go to waste!
