If you’re following along on my Jar Of Lemons Insta, you might have seen a recent post about us having a fun meeting to go to. I’m so excited to update you guys on what’s been going on BTS in the McMichael household!
That meeting was actually our first meeting with our realtor because WE’RE LOOKING AT HOUSES!!! That is, our very first home, people! We’re pretty excited. We’ve done the apartment and rent home thing for quite a while now, so we’re pretty excited to find a place we can truly call our own.
A couple of years ago we had actually started looking for a home, and it was quite the emotional rollercoaster. To say I get emotionally attached to the homes we look at is probably a major understatement. I can always immediately see ourselves there! I tend to be quite the dreamer. š We had found a home that we were 99.9% sure was ours for the taking, but the owners wouldn’t budge on price one bit. While there are definitely way more heartbreaking and disappointing things in life that people go through, I remember feeling like everything I had hoped for and was excited about had come crashing down.
In hindsight, I truly believe that God was teaching me a lesson of putting my hope in Him and was preparing us for what was to comeĀ (AKA moving from Texas to Oklahoma – never saw that one coming!). In the end we were glad that we waited for the “right” time to look for a home.
And now here we are! We’ve spent the past week searching and searching for homes, going through our finances, and dreaming about potentially remodeling a little bit. Obviously, the kitchen is high priority! I mean, great countertops and a beautiful, open kitchen is a MUST in order to make these Healthy Chicken Fajita Tacos, right?? Someone help me justify this to Cody!

But now about these delicious tacos! Here’s how to make these Healthy Chicken Fajita Tacos:
You’ll need a few basic ingredients. Frozen fajita veggies, cilantro, corn tortillas, healthy chicken, and this optional but definitely necessary Avocado Lime Dressing!
To make the chicken for these healthy chicken fajita tacos, I recommend roasting a whole chicken and using the meat for healthy recipes throughout the week (check out theĀ 30-Minute Roasted Chicken Leftovers RecipesĀ post to learnĀ how to roast a chicken and find more healthy chicken recipes)! A second option is to purchase organic, vegetarian-fed frozen chicken fajita strips.
They’re so easy to make! So easy, that I almost called them easy chicken fajitas instead of healthy chicken fajitas. Oh, the tough decisions in life…..
Each of these Healthy Chicken Fajita Tacos has about 133Ā calories. Personally, I recommend eating a couple (or more!! TACOS, y’all.) or having them with a side salad (this Roasted Sweet Potato Black Bean Salad is perfect!). They’re great for having friends over, an easy weeknight dinner, or for meal prep lunches throughout the week!
Healthy Chicken Fajita Tacos
Ingredients
- 2 cups shredded chicken or frozen fajita chicken
- 1 1/2 cups frozen fajita veggies
- 4 corn tortillas
- 1/4 cup fresh cilantro leaves
- 4 Tbsp Avocado Lime Dressing (optional)
Instructions
- Heat up the chicken in a pan over medium heat. Once the chicken is hot, place on the tortillas.
- Next, heat up the fajita veggies until softened. Place on tortillas.
- Top each tortilla with fresh cilantro and the optional Avocado Lime Dressing. Serve and enjoy!
