This recipe is a variation of my Healthy French Toast post (I know….I got SUPER creative on the name here). It’s all of the delicious flavor and still super healthy but has a Peach Chia Seed Compote addition.
How to Make Healthy French Toast?
You can make french toast healthy by choosing a bread with healthy grains such as Ezekiel Bread. It’s low in calories but high in nutrients and fiber which helps keep you fuller for longer and it’s way healthier than white bread.
The Batter
The batter mix makes a big difference between super indulgent and healthy french toast. For a healthier version, I swap refined sugars for natural sweeteners such as stevia, vanilla, and cinnamon and use coconut or nut milk instead of cream or full fat milk.
The Topping
The topping is also something you have to consider. If you top it with lashings of syrup, chocolate sauce, powdered sugar it ain’t gonna be the most healthy start to the day but by topping with my easy peach chia compote you can have all of the flavor and sweet taste you love and still be healthy.
The compote is so easy to make and can be used in all sorts of ways from topping pancakes, cakes, over ice cream and ofcourse with this healthy french toast!
How to Make the Peach Chia Seed Compote
Ingredients
- Frozen peach slices
- Maply syrup
- Vanilla
- Chia seeds
Method
Heat the peach slices in a pan and until they begin to thaw. Add the maple syrup until it’s almost boiling then add the vanilla. Continue to cook, whilst mashing the peaches slightly. Turn off the heat and add the chia seeds.
The end result is super delicious and so pretty, seriously, it’s hard not to each them straight out of the pan!
I’m pretty sure you need in your life. Again, and again, and again. That delicious and wholesome ezekiel bread turned french toast and drenched in a sweet peach sauce loaded with organic chia seeds simply cannot be passed up!

Healthy French Toast w/ Peach Chia Seed Compote
Ingredients
French Toast:
- Recipe for healthy French Toast
Peach Chia Seed Compote:
- 1 cups frozen peach slices
- 2 Tbsp maple syrup
- 1/2 tsp vanilla
- 1 Tbsp chia seeds
Instructions
- Create the French Toast recipe.
- Once the french toast is created, heat the peach slices over medium heat until they completely thaw.
- Add the syrup and turn heat to high, until syrup begins to slightly boil.
- Add vanilla. Continue cooking, mashing the peach slices a little bit.
- Remove from heat, stir, and add chia seeds.
- Serve over french toast and enjoy!
