- Cubed Sweet Potatoes – 4 1/2 cups, or about 1 1/2 pounds. I like to buy pre-cubed sweet potatoes from the grocery store to save time! You could swap for butternut squash if you prefer.
- Salt/Pepper

- Lean Ground Beef – High in protein and cooks up fast. Ground turkey or chicken would work great, too!
- Tomato Paste/Taco Seasoning – Oh my goodness. I’m adding this simple combo to ground beef forever now because it’s so good! Use store-bought or homemade taco seasoning.

- Roast the Sweet Potatoes: Preheat your oven to 425 degrees F. Toss the sweet potatoes with a little avocado oil, salt, pepper, and cinnamon. Roast for about 30 minutes, flipping halfway through.
- Cook the Beef: While the sweet potatoes roast, cook the ground beef in a non-stick skillet over medium-high heat. Add the taco seasoning and tomato paste, stirring until the beef is fully cooked and flavorful.

Made this today and it will be in our rotation. It’s delish. Worried the seasoning for the sweet potatoes wouldn’t be enough, but it was just a hint of cinnamon and it was perfect. Totally forgot to drizzle the hot honey tonight, luckily I will have the opportunity to add it to my leftovers tomorrow (and the next day, since I doubled the recipe)
