Overnight Oats that Taste Like Pecan Pie!
If you’ve ever made my Vegan Pecan Pie recipe, then you KNOW how much I love pecan pie. Especially around this time of year! The holidays make me want to turn everything into a pie flavor. From Pumpkin Pie Overnight Oats to Apple Pie Protein Pancakes and Banana Coconut Cream Pie Oats, I could not be more obsessed.
These overnight oats are truly next level. The base Maple Cinnamon Overnight Oats are topped with a pecan pie overnight oats topping that makes them SO delicious. My kids even think they’re dessert! They have no idea that they secretly are full of protein and healthy ingredients. These oats are one of my favorite healthy fall breakfasts and I look forward to making them every year!

Ingredients for Maple Overnight Oats
Maple Cinnamon Overnight Oats
- Rolled Oats
- Almond Butter – Cashew butter or mixed nut butter are also great options. You could even use pecan butter for that extra pecan flavor!
- Cinnamon
- Vanilla
- Maple Syrup
- Vanilla Greek Yogurt – Plain Greek yogurt or thick coconut yogurt works great, too.
- Milk – Feel free to use regular milk or any plant-based milk!
Pecan Pie Topping (Optional)
- Creamy Almond Butter
- Molasses – Maple syrup works great, too!
- Brown Sugar
- Pecan Halves – Or pecan pieces.

How to Make Maple Cinnamon Pecan Overnight Oats
With just 5 minutes prep time, you’ll have a healthy, cozy breakfast ready to grab straight from the fridge the next morning. Here’s how to make these easy Maple Cinnamon Pecan Overnight Oats:
- Mix the Oats: Divide the rolled oats, almond butter, cinnamon, vanilla, maple syrup, Greek yogurt, and milk into two jars (I love these pretty mugs for overnight oats!).
- Refrigerate Overnight: Give each jar a good stir, pop the lids on, and refrigerate overnight.
- Add the Pecan Topping (Optional): In the morning, combine the almond butter, molasses, and brown sugar for a rich, pie-inspired topping. Microwave it for about 10-15 seconds to make it spreadable!
- Top with Pecans & Enjoy:Â Spread the topping over the oats and sprinkle with pecan halves for a deliciously nutty crunch. So yummy!

Adjust Sweetness: If you like it extra sweet, add an extra drizzle of maple syrup or a sprinkle of brown sugar to the oats.
Microwave for Warmth: For warm overnight oats, microwave the oats in a microwave-safe bowl for 30–45 seconds before adding the topping.
Nut Butter Swap: Feel free to swap almond butter for your favorite nut or seed butter (peanut, cashew, or sunflower seed) for a flavor twist.
Topping: Adjust the macros by adding a drizzle of almond butter and chopped pecans instead of using the entire topping, or feel free to just mix in chopped pecans and omit the topping altogether.

Maple Cinnamon Pecan Overnight Oats

Maple Cinnamon Overnight Oats
- 1 cup rolled oats
- 1 Tablespoon almond butter
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 2 Tablespoons maple syrup
- 1/2 cup vanilla Greek yogurt
- 1/2 cup milk
Pecan Pie Topping (Optional)
- 1 Tablespoon creamy almond butter
- 1 teaspoon molasses
- 1 teaspoon brown sugar
- 1-2 Tablespoons pecan halves (or pecan pieces)
Instructions
- Divide the overnight oat ingredients into two jars.
- Mix, add lids, and store overnight in the refrigerator.
- In the morning, combine the almond butter, molasses, and brown sugar in a small bowl. It helps to microwave it for about 10-15 seconds to thin it out!
- Divide the topping mixture and add to each overnight oats jar, spreading into a thin layer on top.
- Add pecan halves over the topping and enjoy!
