Ingredients
This recipe is made with 6 essential ingredients: rice, turkey, vegetables, yogurt sauce, cheese, and crackers!
Mahatma® Rice – This delicious rice works perfectly in our Turkey Rice Casserole recipe. The extra-long grains create a perfect separate but fluffy texture that we’re absolutely loving!

Cooked Turkey – Shredded or cubed leftover turkey is perfect for this recipe! Chicken can also be subbed if you don’t have turkey on hand.
Canned or Cooked Vegetables – We used canned peas and carrots. However, feel free to use any type of canned or cooked vegetables in this recipe! Broccoli, chopped asparagus, corn, and green beans all work great.
Yogurt Sauce – The yogurt sauce brings everything together in this casserole. You’ll need broth (chicken or turkey), plain yogurt, onion powder, garlic powder, salt, and pepper.
Shredded Cheese – Feel free to adjust the amount of shredded cheese to taste!
Whole Wheat Crackers – Crumbled whole wheat crackers add a little bit of crunch to this yummy recipe. Easily make this recipe gluten free by using gluten free crackers instead!
How to make Turkey Rice Casserole (5 easy steps)
We’re loving just how easy it is to put this delicious recipe together. Simply put it all together in a casserole dish and bake! Here’s how make Turkey Rice Casserole in 5 easy steps:
1. Mix the cooked Mahatma® Rice, turkey, and peas/carrots together in a casserole dish.
2. Whisk the yogurt, broth, and seasoning together to create a creamy sauce.
3. Pour the sauce over the casserole dish along with 1/2 of the cheese and mix.
4. Top the casserole with the remaining cheese and crumbled crackers.
5. Bake for 20-25 minutes, serve, and enjoy!

- Make the rice the day before for the best texture.
- Spray the casserole dish with a little bit of oil before adding in the ingredients to prevent sticking.

Easy Turkey Rice Casserole
Ingredients
- 3 cups Mahatma® Rice (cooked)
- 1 14.5 oz. can peas & carrots
- 2 cups cooked turkey (shredded or cubed)
- 1 1/4 cup plain greek yogurt
- 1/2 cup chicken broth
- 1/2 tsp onion powder
- 1 tsp garlic powder
- salt/pepper (to taste)
- 1 cup shredded cheese
- 10 whole wheat crackers (crumbled)
Instructions
- Preheat oven to 350 degrees F.
- Place the cooked rice in a casserole dish.
- Add in the peas and carrots.
- Add in the cooked turkey.
- Mix the rice, vegetables, and turkey together.
- In a mixing bowl, whisk together the yogurt, broth, onion powder, garlic powder, salt, and pepper.
- Pour the sauce over the casserole dish and mix.
- Add 1/2 of the shredded cheese and mix.
- Top the casserole with the remaining cheese and crumbled whole wheat crackers.
- Bake for about 20-25 minutes (or until cheese is melted and everything is hot).
- Serve and enjoy!
