So, I’m currently training for half-marathon with a friend. I’ve done 2 other’s before, and every time I do one I think “that was horrible, I’m never doing that again!”….yet….here I am! Round 3, y’all. Why is running addicting? It’s definitely a love-hate thing. I hate it while I’m doing it, but when I’m not doing it then I miss it. Anyone else feel this way? Am I just crazy? It’s ok, we can be honest here.
I love running because of how I feel after the run, but I have to be super careful about what I eat beforehand. Especially when it comes to those long distance runs! The LAST thing I need is to feel sick when I still have 8-10 miles to knock out. Today, I’m sharing my absolute favorite pre-run breakfast with you guys because it’s THE BEST!
True story: I could probably eat this all day everyday. You might think I’m joking, but the day I made this and photographed it, I literally ate all 4 of the toasts you see here. ALL OF THEM. Pre-workout, post-workout/lunch, afternoon snack, and dessert after dinner. I know I know I know! But guyyyys, just look at it…..
Is Peanut Butter for Breakfast Healthy?

Apple Cinnamon Peanut Butter Breakfast Toast
Ingredients
- 4 slices sprouted grain bread (or any type)
- 4 Tbsp peanut butter
- 1 apple (thinly sliced)
- 2 tsp cinnamon
- 1/4 cup granola
- 2 Tbsp pecan halves
- 1 Tbsp crushed pistachios (optional)
- 4 tsp Truvia® Nectar
Instructions
- Toast the slices of bread.
- While the bread is in the toaster, thinly slice the apple.
- Top each piece of toast with 1 Tbsp peanut butter, apple slices, 1/2 tsp cinnamon, 1 Tbsp granola, 1/2 Tbsp pecan halves. Add the optional pistachios and drizzle with Truvia® Nectar.
- Serve and enjoy!
