Apple Cinnamon Peanut Butter Breakfast Toast GOODNESS! When I was training for both of my half marathons several years ago, this easy breakfast was my go-to for long run days. And fast forward to today, it’s still one of my go-to’s on busy weekday mornings!
I love that it’s higher in protein, so filling, and even my kids love it. The crunchy apples with cinnamon, a drizzle of honey, and chopped nuts or granola (not to mention creamy peanut butter) is what dreams are made of. I could eat this all day everyday!

Ingredients
- Sourdough Bread – Toasted until golden and crisp. Any bread works here. Sprouted grain, whole wheat, or anything you want!
- Apples – Thinly sliced for a fresh, crisp texture. Honeycrisp and Fuji are my personal favorites.
- Peanut Butter – Go for a natural, no-added-sugar peanut butter. Almond or cashew butter works too!
- Ground Cinnamon – Brings warm, cozy flavor that pairs perfectly with the apples.
- Granola – Adds a delicious crunch! Any variety you love will work.
- Chopped Pecans – For extra crunch and a nutty depth.
- Chopped Pistachios or Walnuts (Optional) – A fun way to mix up the flavors and textures!
- Honey – A light drizzle on top brings just the right amount of sweetness.

I can’t get over how easy this peanut butter toast with sliced apples is to make! It takes less than 5 minutes to put together and every bite is SO good. - Toast the Bread – Use a toaster or pop the slices in the oven until they’re golden and crispy.
- Slice the Apples – Thinly slice two apples while the bread is toasting.
- Assemble the Toast – Spread each slice with peanut butter, layer on the apple slices, sprinkle cinnamon, then top with granola, chopped nuts, and a drizzle of honey.

Apple Cinnamon Peanut Butter Breakfast Toast

Ingredients
- 4 slices sourdough bread (or any type)
- 2 medium apples (thinly sliced)
- 4 Tablespoons peanut butter
- 2 teaspoons ground cinnamon
- 4 Tablespoons granola
- 2 Tablespoons chopped pecans
- 1 Tablespoon chopped pistachios or walnuts (optional)
- 4 teaspoons honey (or to taste)
Instructions
- Toast the slices of bread in a toaster or in the oven.
- While the bread is in the toaster, thinly slice the apple.
- Top each piece of toast with: 1 Tbsp peanut butter, apple slices, 1/2 tsp cinnamon, 1 Tbsp granola, chopped pecans, chopped pistachios, and a drizzle of honey.
- Serve and enjoy!
